Honeydew Mint Ice

1 ripe honeydew melon

1/4 cup fresh lime juice

1/4 cup sugar

1/2 cup fresh mint leaves

Or use leftover from Honeydew Mint, Basil and Lime


  1. In a blender, purée the melon, lime juice, and sugar until smooth. Add the mint and pulse until finely chopped.
  2. Pour the melon mixture into a 4 1/2- by 8 1/2-inch loaf pan or 1 1/2-quart freezer-safe container. Cover and freeze until firm, at least 6 hours and up to 3 days.
  3. When ready to serve, let sit at room temperature for 5 minutes. Using a fork, scrape the surface of the melon ice to create flakes; divide among glasses or bowls.
